Summer Supper Treat

One of my favorite things to do is to walk out into my summer garden, pick everything that is ripe and wonderful, and put it on a parchment lined baking sheet. Next, I drizzle olive oil over all of it and sprinkle it with salt. Then, I place it in a 400 degree oven until it is browned and crispy on top. While it cooks, I have enough time for my afternoon swim-45 minutes. Salmon is a great addition to this-my favorite meal. Most of the time, the oil doesn't soak through the parchment so cleanup is as simple as throwing away the parchment paper and putting the baking sheet back into the cabinet.
I love those fresh vegetables and I love parchment paper. So easy!

Gorgeous tomatoes and peppers. And, yes, even Beeler has discovered that he likes a whole lot more veggies than he thought now that he has discovered them grilled with oil and salt. :D

This looks so yummy and easy. I think I'll do the same today for dinner. The garden is finally giving us a lot of produce , I have olive oil & parchment paper in the pantry.Summer gardens are a real blessing!Thank-you.
